Christmas Rocky Road
Ingredients
- 500g Milk chocolate melts
- 20g Coconut oil
- 100g Small marshmallow
- 190g Raspberry lollies cut into half
- 300g Mint M&Ms
Method
- Line a slice tray with baking paper
- Place 500g of chocolate melts into the bowl with 20g of coconut oil, blitz for 10 seconds on speed 9
- Scrape the bowl and melt at 50°C for 4 minutes at speed 3
- Scrape the bowl and melt further at 50°C for 1 minutes at speed 2
- Scrape the bowl and add the 100g of marshmallows, 200g of chopped raspberries and 300g of mint M&Ms through the lid while mixing at 50°C for 2 minutes on reverse speed 1
- Scrape the bowl and stir again with spatula, then pour into the prepared tray. Place in fridge for 3 hours or overnight then cut into squares
