Coffee Liqueur Truffles
Ingredients
- 330g White chocolate coated biscuits (such as Tim Tams)
- 250g Cream cheese (chopped)
- 60ml Coffee Liqueur (such as Kahluah)
- 250g White chocolate
- 80g Milk chocolate
Method
- Place 350g of white chocolate biscuits into the bowl and mix for 5 seconds on speed 8. Check the mixture, if not fine crumbs mix again
- Add 250g of cream cheese and 60mls of Coffee liqueur to the bowl and combine for 10 seconds on reverse speed 2
- Scrape the sides of the bowl and mix again for 5 seconds on reverse speed 2
- Scrape mixture into another bowl and place in the fridge for 30 minutes to harden
- Take mixture from fridge and roll into balls approx. 2cm in size. Place on a lined tray and return to fridge for another 30 minutes
- In a clean bowl add 250g of white chocolate and 80g of milk chocolate, melt at 50°C for 2 minutes at speed 3
- Scrape down the bowl and mix again at 50°C for 1 minute at speed 3
- Pour the melted chocolate into bowl and then dip the prepared balls a few at a time. Roll in the mixture and pick up using spoons, allow chocolate to drip off and then place on tray to set
- Once all balls have been coated return to fridge for another 45 minutes to finally set
